Polish flours are divided into types depending on the thickness of the grain after grinding and are free from any type of improvers, which is why we use only Polish flours to produce our artisan breads, which give a specific taste and aroma to the baked goods we prepare and bake.

Rye flour is often used to bake artisan bread and to prepare leaven for traditional rye soup. To obtain a more delicate bakes product with a lighter consistency, it is often mixed with wheat flour. There are three types of rye flour, type: 580, 720 and 2000. The higher the type, the healthier it is, more fiber it has, and the lower its glycemic index. What are the differences between the mentioned types of rye flour? Which is the healthiest?

Rye flour is often associated with healthy food, dark bread and a reduction diet. Rye flour contains much more fat than protein. It is suitable for people suffering from diabetes or insulin resistance. The products in question are on the list of prohibited items for people on a liver diet. Therefore, in the case of any diseases or food intolerances, it is worth consulting a doctor before reaching for products made from rye flour in order to choose the right bread and pasta for yourself.

Rye flour – nutritional properties

Rye flour – health properties

So how many calories does the product contain? 100 g of the product provides approximately 350 kcal, depending on the type. However, it is worth noting that rye flour allows the production of high-energy baked goods. They are distinguished by a large amount of complex carbohydrates, which contribute to the stabilization of sugars and at the same time make you feel full for a long time.

The light type of rye flour provides relatively more calories than the dark type. The latter additionally ensures a low glycemic index, which is responsible for the level of glucose in the blood, which is why the products are recommended for people on a diet.

Rye flour – taste and appearance

The higher the type, the less ground the grain. Rye flour 500 is perfect for making pasta. To prepare sourdough for żurek, it is worth using a medium-type product, e.g. 800. The previously mentioned wholemeal flour with the thickest consistency can be used in the production of fresh rolls, baguettes and bread. It will also allow you to create whole grain products in a healthy and nutritious form.

Differences between rye and wheat flour

The most popular flours are wheat and rye. They differ primarily in appearance, color and taste, but their purpose is practically identical. Both types are used in the production of bread. So what makes baked goods made from rye flour special? They are enriched with valuable nutritional and health properties. Why? The difference occurs already at the stage of the production process. Wheat flour undergoes purification stages, which causes it to lose many ingredients, vitamins and minerals. The body is much better at absorbing whole rye products. They have a lower glycemic index and contain more fiber.

Rye flour is considered a healthier alternative to traditional wheat products, although it is not tasty for everyone. Light baked goods are much more delicate and fluffy. Whole rye products are characterized by distinctiveness with a nutty, sour note. The type of flour can greatly influence the taste of a dish. Bread made from rye flour is dense and wet. Rye flour type 580

Rye flour is the lightest of the rye flours, it is yellow in color and has visible darker particles that remain after grinding the grain, it is ideal for baking mixed wheat-rye bread. It is characterized by a low content of dietary fiber, as well as minerals and B vitamins.
The nutritional value, i.e. energy value, is 48 kcal per 100g of the product. Additionally contains:
protein – 6.4 g,
fat – 1.9 g,
carbohydrates – 76.6 g.

Rye flour type 720

Type 720 rye flour is light grey-brown in color. There are darker mottles left after grinding the grain. This type of flour is distinguished by trace amounts of germ and bran.
Rye Flour type 720 contains B vitamins, vitamin E, as well as minerals such as zinc, magnesium, potassium, sodium, calcium, iron and several others. All this makes consuming rye flour very healthy. Additionally, rye flour supports the heart – according to various studies, consuming this type of flour is associated with a reduced risk of heart disease.
The nutritional value of 100g of the product is 348 kcal, including:
protein – 5.9 g,
fat – 1.7 g,
carbohydrates – 77 g.

Rye flour type 2000

Rye flour type 2000 has a dark grey-brown color, which is the result of low milling. This product is rich in fiber, B vitamins and minerals. This flour is very filling, so people who suffer from stomach problems or digestive system cancer should avoid it. It is suitable for diabetics or people who care about their figure.

The alkaloids it contains effectively lower blood cholesterol levels, so its consumption may contribute to the prevention of heart disease. Compared to wheat flour, it has little starch. The nutritional value in 100g of the product is 348 kcal:
protein – 7.9 g,
fat – 2.2 g,
carbohydrates – 74 g.

The beneficial effects of dietary fiber

A complex of heterogeneous substances found in plant cell walls, called dietary fiber, has health-promoting ingredients for the body. It is resistant to the action of enzymes that are present in the digestive tract. The most important properties of dietary fiber include:

  • causing a feeling of satiety,
  • increasing digestion efficiency,
  • supporting the absorption of nutrients,
  • supporting intestinal peristalsis,
  • hypocholesterolemic effect.

The International Health Organization recommends that the daily intake of dietary fiber for an adult is approximately 25 g.
